WHAT IS A RAW CHOCOLATE BAR?
RAW FOODS adhere to meticulously controlled levels of heat exposure in order to preserve enzymatic activity and cellular integrity for optimal nutrition. Often raw foodists build a daily diet around raw whole foods such as vegetables, fruits, nuts, seeds, grains and Fearless Chocolate.
Crafted with whole Raw Organic Cacao beans, FEARLESS chocolate is always temperature controlled from bean to bar using water-jacketed equipment. We grind, mix, melt, and mold FEARLESS chocolate at temperatures under 118F to preserve the natural nutrients, minerals, enzymes, and of course, the abundant anti-oxidants.
What is the difference between RAW and ROASTED chocolate?
TRADITIONAL CHOCOLATE bars are made with heavily roasted cacao beans. Each FEARLESS Chocolate Bar is crafted with unroasted Cacao beans and other uncooked and unprocessed ingredients. We slow-grind the Cacao at temperatures well underneath 118F and introduce our unique mixtures of ingredients at even lower temperatures in order to preserve the natural nutrients, enzymes, anti-oxidants, amino acids, and oils present in these natural whole foods.

OUR PHILOSOPHY on eating is simple: First we strive to listen to what our bodies need and desire from foods as guidance on building our diet; then we respectfully refine our choices based upon the availability of fresh and organically farmed options. The listening comes first.
We like to eat simple, whole foods featuring lots of vegetables, leafy greens and moderate amounts of chocolate. Collectively much of our diet is raw, while some things are cooked. What we eat varies day-to-day based upon what our bodies may need at that given moment. This is what works for us.
An unbelievable mass of opinion concerning health and nutrition competes for attention and patronage. When it comes to any lifestyle choice its important to hear what's going on inside the body beyond the noise of politics, social pressures, emotional cravings and other imbalances. Clearly, it is important to seek the advice of those we love and trust; yet we also encourage our customers to lend themselves an inner ear. |

WHY FEARLESS CHOCOLATE isn't made with AGAVE?
MANY RAW foodies and food makers believe very strongly in using agave nectar with raw foods. While we are not anti-agave, we don't use agave in our chocolate, and for very specific reasons. If you would like to learn more about why FEARLESS doesn't produce agave-sweetened chocolate please request our Agave Report :o) What's up with RAPADURA?
RAPADURA IS an organic, minerally intact, whole-cane sugar from Brazil. Beyond fresh whole sugar cane, Rapadura is the closest thing to a "raw", unrefined sugar on the planet. Featuring approximately 50% of the sucrose (the actual sugar) of conventional white sugars and "evaporated cane juice," Rapadura organic sugar is the perfect unbleached, unrefined sweetener to use in place of refined sugars in FEARLESS chocolate. With its minerals and carbohydrates in-tact, we believe Rapadura offers superior nutritional value above all other dry sugars that we have encountered. We first learned about Rapadura in Paul Pitchford's famously fantastic book "HEALING WITH WHOLEFOODS" (pages 194 and 704). WHY FEARLESS DOESN'T use SOY LECITHIN?
FEARLESS chocolate is made with a caliber of cacao requiring no Soy Lecithin. Chocolate manufacturers traditionally use soy lecithin as an emulsifier to improve the texture of chocolate during manufacturing. Premium chocolate generally doesn't need such emulsifiers. Hence, FEARLESS has no need for Soy Lecithin, Sunflower Lecithin or any other emulsifier. |
